This is by far one of my favourite salad dressings. It is especially nice when making a chicken or tuna salad for lunch! Its even nice as a topping for certain pasta dishes. But honestly, even without the added meat in your salad, its a great topping.
Ingredients:
1/4 Cup Water
3 Tablespoons vegetable oil
2 Tablespoons white vinegar
2 Tablespoons lemon juice
2 Teaspoons Dijon mustard
1 Teaspoon whole dried oregano
1/2 Teaspoon sugar
1/2 Teaspoon freshly ground black pepper
1/3 Cup (2 oz.) crumbled blue cheese
Method:
Combine all ingredients in a jar. Cover tightly, and shake vigorously. Chill thoroughly. Yield: 1 Cup. 38 Calories per tablespoon. Good served over mixed greens.
