This is one of those recipes left wide open to your creativity. However, in case you have never made one before here is a basic recipe you can start off with and you can alter to taste next time.
Ingredients:
- Black beans
- Red beans
- Sting beans
- 1 small onion
- 1 medium sized avocado (optional)
- 1/2 (half) a red and half yellow pepper
- 2 tbls. olive oil
- 1 tbls. vinegar
- 1 tbls. fresh lemon juice
- 1 tbls. hot sauce
- 1 -3 cloves fresh chopped garlic (to taste)
- salt and pepper to taste
Method:
Fry onion and pepper until browned and set aside to cool
Mix the beans then add the cooled onions and peppers and the avocado
Mix the olive oil, vinegar garlic, lemon juice and hot sauce and add to bean mixture
I like to let it stand for 1 hour before serving to let the salad soak a little in the dressing,
