This oat flour banana bread is soft and fluffy and great as a loaf or muffins. Great as a desert with cream or ice cream or with a nice cup of tea or coffee. Topped with some butter it’s even more delicious.
3 Bananas (mashed)
1/2 cup melted coconut
2 eggs
1 tsp vanilla extract
2 cups oat flour
1 tsp baking powder
1/2 cup granulated sugar
1/2 cup chocolate chips
Preheat oven to 180 C and line a loaf pan with parchment paper
In a mixing bowl combine the bananas, melted coconut oil, eggs and vanilla extract. Stir well to combine
Add the oat flour, baking powder and sugar. Stir well to combine the mixture
Fold in the chocolate chips
Pour batter into lined bread pan
Bake for 35 – 38 minutes or until toothpick inserted comes out clean.
When ready remove from the oven and allow to cool before slicing
The bread pan can be replaced by a muffin tin and then bake for approximately 20 minutes. For best results turn the pan around once for even baking.
For best results use overripe bananas. Do not use green bananas.
If needed, replace the melted coconut oil with another neutral flavoured oil.
