Omelettes are always a quick option for a filling meal. They are so versatile and you can add basically anything you like to make a quick yet nutritious meal. Here is a personal favorite of mine. If you don’t eat ham and/or cheese you can substitute with leftover veggies from last night’s dinner, or simply fry up some finely chopped veggies of your choice and add it to the mixture.
Ingredients
2 tablespoons of olive oil
1 onion
3 potatoes
6 eggs
3 – 4 tablespoons of parsley
Salt and Pepper to taste
Ham and Cheese slices
Preparation
Chop potatoes into very small cubes
Chop onion into small pieces
Chop the parsley (set some aside for garnish)
In a pan fry onions and potato lightly then set aside
Beat eggs lightly
Method
Combine the eggs, onion, parsley and potato and mix well
Now place half the mixture into the pan, over low to medium heat
Layer the mixture in the pan with ham and cheese slices
Pour the other half of the mixture over the layered ham and cheese
Allow to simmer slowly
Turn over and simmer until golden brown.
Remove from heat, garnish with a little parsley and serve.
This turns out to be quite thick and is very filling, so depending on how hungry you are this could feed 2 people easily.
