2 medium sized peeled and cubed sweet potatoes
1 tablespoon olive oil
2 eggs (hard boiled and chopped)
1/2 cup chopped walnuts
1 apple peeled and chopped
1/4 cup minced fresh parsley
3 – 4 tablespoons mayonnaise
4 teaspoons white vinegar
1 tablespoon honey
1/2 teaspoon grated lime zest (or a little lemon juice)
1/4 teaspoon salt
Place the sweet potatoes in a bowl and coat them with olive oil, salt and pepper
Place potatoes in a 15x10x1-in. baking pan
Bake at 400° for 30-45 minutes or until tender.
Cool to room temperature.
In a large bowl, combine the walnuts, apple, egg, parsley and potatoes.
In a small bowl, combine the mayonnaise, vinegar, honey, lime zest and salt.
Pour over potato mixture and toss to coat. Serve warm or cold.
Optional flavours that can be added depending on taste:
Red or Yellow peppers – roasted with the sweet potatoes or raw
Celery and/or Raisins
Curry or mustard powder can also be added to the mayonnaise for extra flavour
