1 cup of quinoa
1 cup water
1.5 cups parsley – chopped
1/2 cup chapped fresh mint
2 fresh tomatoes cut small
1 garlic clove minced
1 green onion thinly sliced
3 tbsp olive oil
2 tbsp fresh lemon juice
1 avocado – cubed
1/2 cucumber – cubed
1/2 red or yellow pepper – cubed
salt to taste
Rinse quinoa well.
In a pan toast quinoa until golden brown
Add 1 cup of water and bring to a boil
Reduce the heat and allow to simmer for 15 minutes
Set aside to cool
In a small bowl combine the olive oil, lemon juice, salt and crushed garlic
Combine the rest of the ingredients and coat with the olive oil dressing
Add the quinoa once its cooled
Mix well and serve.
